An analysis of the causes of highly pathogenic avian influenza А/Н5NХ viruses spread over territory of the Russian Federation in 2016–2019 Abstract: The article provides an analysis of the possible causes of the large-scale spread of the influenza virus in the country and its entry to poultry farms. Epizootics of highly pathogenic avian influenza, which began at the end of 2016, differs from influenza epizootics of 2005–2008. The involvement of large enterprises in the process, the registration of repeated outbreaks at poultry farms, enormous economic losses, negative social consequences, and the absence of mortality in the wild avifauna made us take a fresh look at the essence of the large-scale problem. The paper provides the data on the characteristics of the epizootic process and the spread of influenza in poultry populations.

The analysis of planning system for anti-salmonella measures on a poultry plant Abstract: The article analyses the "National Program for the Prevention, Identification and Control of Salmonella Infection in Poultry Farms of the Russia for 2018–2023" project developed by the Ministry of Agriculture of the Russian Federation. The authors studied the role of pedigree producers in the spread of salmonella in the poultry farms of Russia as well as their genetic and biological diversity. The quality assessment of mechanically deboned turkey meat produced through different separation pressure Abstract: Some results have been given in the paper for quality research of Mechanically Deboned Meat (MDM) of different turkey carcass parts specifically breastbones, back bones and carcasses. MDM received with the new generation press with multizone sleeve has been compared with manual deboning meat of the same carcass parts. Separation pressure influence has been revealed at MDM quality. Pure breast bone meat content (BEEFE) in low pressure MDM is 74.10 percent, back bone meat 60.73 percent, carcass meat 41.33 percent. Data for high pressure MDM are 69.05 percent, 52.43 percent and 47.81 percent respectively.
